how do you set the default lang to english, and why is the default set to german when most eshops are in english?

Go to Master Settings -> Languages, choose English, click the checkbox “Is default” and save your Settings.

please integrate like this: Setup detects locale and switches to english mode, therefore everything is installed with the default language English. If a german user installs the shop, everything should be german by default. if a japanese user wants to install eshop, and japanese is none of the standard languages, it should use english instead. But there should also be an option on first setup page to choose other languages, for the case that a german user wants to install an english eshop. Same locale detection should happen in admin area.
Some little hint: The language directories don’t match the ISO Standard locales. There should be directories like:
de_DE
en_GB
en_US
de_AT
etc.
But i trust you that this is already part of the internationalization and localization plans
